Neapolitan cooking has always been as much about instinct as instruction. So much is passed from one generation to the next by watching, tasting and knowing when something is ready.
That spirit runs through our kitchen: thin, crisp pizzas, slow sauces, comforting pasta and generous plates. Familiar flavours, made properly and without unnecessary fuss.
